Overnight Oats topped with Yacon Powder, Coconut, Sunflower Seeds, Pumpkin Seeds and a dollop of Greek Yogurt

2 cups SR Flour
1 cup Yacon Powder
2 tsp Cinnamon
1 cup chopped Dates
3 cups grated Zucchini
3 Eggs

Sift flour and yacon powder into large mixing bowl. Add cinnamon and mix well. Mix dates through, separating clumps. Add grated zucchini and eggs. Mix well.
Spoon mixture into 2 loaf tins.
Cook in moderate oven for 40-50 min.

Delicious spread with butter!

I just substituted the brown sugar in an existing blueberry muffin recipe, for Yacon Powder. Worked perfectly and tasted fantastic!

Sprinkle on your breakfast, pancakes, dinner, anything that a little sweetness would go well with.
