What is Yacon?

 

The yacon plant is native to South America and is a member of the sunflower and Jerusalem artichoke family. The plant produces tubers that are similar in size and shape to those of a sweet potato. These tubers are juicy and very sweet, composed mostly of water and fructooligosaccharides (FOS).  The sweetness of yacon is from the prebiotic fiber called inulin, which increases with storage, and the high concentration of FOS. FOS is a form of fructose that cannot be absorbed by the body, it actually lowers the amount of glucose production in the liver.  This makes it ideal for diabetics.

How to use Yacon.

It is suggested that taking a teaspoon of yacon each day provides the best benefits (because of the high fiber it can cause unpleasant experiences to take more than that until your body is used to it). It has a sweet caramel-like flavor which makes this very easy to do, but it also is easy to include in daily food by using it as a substitute for sugar. Try adding it to chocolates, using it in a salad dressing, or as a topping on pretty much anything - you get to boost your immune system, benefit your health and feel like you're having a treat all at the same time!

Yacon powder can be used as a substitute for dry sugars. It absorbs more liquid than sugar so it may be necessary to reduce flour quantity in some recipes.  Using yacon powder has a similar result to that of brown sugar or coconut sugar.

 

Yacon syrup is easy to substitute in recipes that already use a syrup form of sweetener; use it in place of honey, maple syrup or rice malt syrup, etc.

How our products are made.

Our yacon plants are grown organically in North East Tasmania.  Once ready for harvest, the tubers are dug by hand.  The production process is as follows: 

  • Yacon Powder - the tubers are washed, peeled, diced, and then freeze-dried. Once dried it is pulverized into powder.

  • Yacon Syrup - the tubers are washed, peeled, ground to a pulp, and the juice is then extracted. The juice is then simmered until the Brix level reaches 70%.

  • Yacon Crisps - the tubers are washed, peeled, diced, and then freeze-dried.

 

All products are 100% natural, contain no additives and all production is done locally.
