Why use Yacon?
Yacon is rich in potassium, calcium, and phosphorus, and contains iron, sodium, magnesium, and vitamins A, B1, B2, and C. It is acclaimed to be a superfood for diabetics and ideal for low-calorie and weight-loss diets. Substitute for Sugars
Yacon powder can be used as a substitute for dry sugars. It absorbs more liquid than sugar so it may be necessary to reduce flour quantity in some recipes. Using yacon powder has a similar result to that of brown sugar or coconut sugar.
Yacon syrup is easy to substitute in recipes that already use a syrup form of sweetener; use it in place of honey, maple syrup or rice malt syrup, etc.
